OUR STORY

Blistered Bread is a family sourdough bakery in Letterkenny, Donegal.  We handcraft breads and pastries using time and the finest natural ingredients.  We slow the process down for easier digestion and enhanced flavour.

Our sourdoughs are made with flour, water, salt and our sourdough starter. That’s it. We are passionate about working with the best local ingredients available to us. We collaborate with farmers that are invested in sustainable practices for their land. This produces a more nutritious wheat. We choose local when possible to reduce our impact on the planet.

We encourage you to slow life down.  Make time for those you love. Make time to eat good food and support local.

In 2015, I was introduced to artisan sourdough breads.  I had the good fortune to work for the wonderful people at Brasserie Bread in Melbourne, Australia. From then on I was hooked.

Good bread is such a play on the senses. There is the smell, the eye-catching blistered crust, the crackle as you cut into a fresh loaf, the contrasting crunchy crust and soft crumb texture, and finally the taste. If all that isn’t good enough, it is also better for you. I want to offer this simple pleasure to you. I hope you enjoy.

MEL

Mel is our sourdough starter. Born in Melbourne (AUS), Mel joined us on our journey to Donegal. She has been part of our family for three years now. Technically, Mel is more a community of wild yeast and good bacteria, than a she. It is this community that breaks down the protein in the bread to make it easier for your body to digest and absorb the prebiotic fibres.
